3 Ways To Make & Enjoy Paleo Chocolate


I remember once an old work colleague stated he hated chocolate, despised it, couldn’t think of anything more disgusting to eat! I’m not sure what population of the world share his disgust for chocolate, but considering everyone I know either likes chocolate, loves chocolate or LOVES chocolate, I think it’s safe to presume these 3 recipes will go down a treat.
There are many paleo chocolates hitting the market these days, avoiding dairy, using natural sugars such as agave and better yet, avoiding the all too common soy lecithin, in which almost every situation will be GMO derived.
But these paleo-friendly chocolates you can buy in store do come with a negative… the price!
Wether you’re a regular consumer of chocolate or on the rare occasion enjoy a bite or two, the ingredients needed to make paleo friendly chocolate at home have a good shelf life, essentially meaning that if you check the use-by-date before you buy, you could store your chocolate making ‘kit’ for a couple of years!
Paleo Chocolate
1 cup cocoa butter

2 tablespoons coconut oil
1 cup cocoa powder
2 tablespoons honey

Melt the cocoa butter and coconut oil in a small pot over low heat. Add the honey and cocoa powder and use a hand blender to combine well. Continue stirring over low heat until a smooth consistency has formed.
Pour the chocolate into chocolate moulds and place in the fridge for 1-2 hours or until set.
If you don’t have chocolate moulds, line a baking tray with baking paper and slowly pour the chocolate onto the baking paper, evenly spreading it out to a 1/2cm thickness. Place another sheet of baking paper on-top and place in the fridge to set.
Remove gently from the moulds (or cut/break the chocolate into pieces if not using a mould) to serve.
With the instructions above, try these flavors by simply adding the additional ingredients into the pot and combining before placing into the moulds.
Roasted Walnut & Orange
1 cup cocoa butter

2 tablespoons coconut oil
1 cup cocoa powder
2 tablespoons honey
2/3 cup roasted walnuts, finely chopped
1 tablespoon finely grated orange rind

Coconut Rough
1 cup cocoa butter

2 tablespoons coconut oil
1 cup cocoa powder
2 tablespoons honey
1/2 cup toasted shredded coconut

Almond & Raspberry
1 cup cocoa butter

2 tablespoons coconut oil
1 cup cocoa powder
2 tablespoons honey
1/3 cup toasted almonds, finely chopped
1/3 cup dried raspberries, finely chopped
